Recipe Ingredients
2 cups jasmine rice ( or any rice you choose to use)1 1/2 cups water1 cup canned unsweetened coconut milk1 teaspoon salt
Recipe Instructions
Boil the coconut milk in a cooking saucepan.
Add the salt and rice and let them cook for 10 minutes. Ensure that you are constantly stirring. Reduce the heat to very low.
Add the thick coconut milk while stirring for another five minutes as the mixture simmers.
Cover the rice tightly and let it steam for 20 to 25 minutes. However the heat should be as low as possible
Watch it to make sure it does not burn, adding more water if needed to keep it from burning.
Can be served with meat stew, vegetable stew or any other stew.
