This mawe tatu cake recipe is a must try

You don't need an oven

Necessity is the mother of invention and Kenyans know this so well.

Heard of the mawe tatu baking method? It’s the new method Kenyans are using to bake a cake at home. It’s easier and you actually do not need an oven. You only need a charcoal jiko or gas cooker to improvise your oven.

Ingredients

2 cups of raising flour

1 cup of sugar

1 cup of milk

3 eggs

Pinch of salt

100gms of margarine

Cocoa powder/Choco primo (optional)

Instructions

Beat the margarine and sugar in one bowl until they are well blended.

Beat the eggs in a separate bowl before adding them into the mixture. Whisk them together until you get a fine paste.

Now it’s time to add your raising flour and a pinch of salt. Continue mixing them up and ensure that the mixture is refined.

Now add milk and continue mixing. If it’s too thick, continue adding milk until you achieve your desired thickness.

Divide your margarine into two portions and add cocoa powder to one mixture and stir.

That said, the preparation is done and we are just about to begin the baking process.

Pick a big sufuria and place your mawe tatu (three stones) inside. The stones should be somehow flat so that the inner sufuria balances.

Place the sufuria on the gas cooker or the charcoal jiko and cover it for preheating.

In a smaller sufuria, use the remaining margarine to rub the inside of the sufuria to prevent the cake from burning.

Pour your batter into the smaller sufuria and use the cocoa and margarine mixture to make patterns.

Once the bigger sufuria is properly heated, place the smaller sufuria with the batter inside and cover the larger sufuria with a lid.

Let the cake bake under moderated heat for 45 minutes to one hour.

To check if it’s ready, insert a skewer and if it comes out clean, your cake should be ready.

Let it cool for some minutes then serve it with the beverage of your choice.
